ONE of Chester's most popular restaurants has been awarded a prestigious culinary prize.
The Forge, within Hotel Indigo Chester, has secured two AA Rosette awards for culinary excellence. The nationwide awards, which first appeared in 1956, assess the quality of food served in restaurants and hotels via a team of experienced inspectors.
Led by Head Chef, Dan Regan, the 70-seater restaurant is know for its use of wild, sustainable British fare. The open kitchen cooks over wood and charcoal, using wild and locally reared meat, that is aged on the premises.
Robert Martin, the AA Inspector said: "We are pleased to award two AA Rosettes to The Forge. The quality of the well sourced ingredients impressed us as did the execution of the dishes. The well balanced and imaginative menu showed good technical skill from the kitchen team.
"The stay at Hotel Indigo Chester was a most enjoyable visit, they have a well-managed establishment, a focused team, delivering friendly hospitality and attentive service in a delightful environment".

Hotel Indigo Chester and The Forge have also recently won two other awards – Gold Accommodation in the Taste Chester Awards and a Tripadvisor Travelers’ Choice Award for 2023.
