The Forge restaurant at Hotel Indigo Chester has launched a new collaboration with Aubrey Allen, offering ethically sourced meats for their summer menu.

The award-winning restaurant, known for gaining two AA Rosettes for Culinary Excellence in 2023, has announced the partnership with the Royal-approved supplier.

Aubrey Allen is a long-standing family business best-known for its high quality meat, making it top choice for many.

With great pride in their selection process, they only choose from the best 4 per cent of British beef cattle.

The animals are born, bred, and reared in the green British Isles, which enhances the flavour of the meat.

The beef cuts are then dry-aged for a minimum of 28 days in specially designed rooms to lock in flavour and tenderness.

With this partnership, diners at The Forge have the opportunity to enjoy a variety of meat, including Heritage Sirloin, Grass-Fed Fillet, Ribeye and more, all sourced and prepared with high ethical standards.

Operating since Spring 2021, the 70-seater restaurant is renowned for using sustainable British ingredients and a love of simple but exciting over-fire and charcoal cooking.

Led by head chef Dan Regan, there's also an option to enjoy fish, vegan, and vegetarian dishes on the menu.

Scott Rankin, the general manager of Hotel Indigo Chester, expressed his pleasure over the new collaboration.
